J. Moreau & Fils was founded in 1814 and for over
two centuries has been a reference in Chablis and beyond. It is the
oldest winery in the region and has built its reputation on
a love of wine and respect for the terroir.
The system of supervision of J. Moreau & Fils and
their fifty partner-growers has three levels: parcel selection (with
over 300 parcels of land classified according to their characteristics),
supervision of the vines (cutting, treatment, turnover), and harvest
and vinification (according to a calendar that respects the nature
of the parcels and the optimum maturity of the grapes).
In Chablis and other regions, J. Moreau & Fils
has managed to develop the same savoir-faire and quality: Burgundy,
the Loire Valley, varietal wines from the Languedoc, table wines from
the Loire and Rhône Valleys form a varied and complete range.
After delicate pressing, the wines are vinified at
a low temperature. They feed off a total or fine lees and are regularly
stirred in a cask of over 50 000 hectolitres.
The wines of J. Moreau & Fils are characterised
by the natural blooming of their flavours and the respect of their
classic, mineral freshness, as well as a fine balance between structure
and aromatic complexity.
The wines of J. Moreau & Fils are distributed in
over 80 countries and are served in
the most prestigious restaurants. Each year they win a number of prizes
and awards around the world.
Because wines require good food, the annual J. Moreau
& Fils Fish Dish Awards invite chefs from a number of countries
to compose seafood dishes that go well with the Chablis of the house.
These awards, that reward the most creative inventions are becoming
more popular every year.
