The sole objective of our “Réserve”
range is to appeal to serious lovers of Chablis. Only blind
tasting of cuvées from strictly monitored parcels can
bring about the creation of
a “Réserve” of approximately 10,000 bottles
in Chablis, Chablis Premier Cru and Chablis Grand Cru. Only
the best vintages and the best terroirs are set aside and proposed
at maturity, after a minimum of 18 months’ ageing, destined
to be matched with the finest of foods. |

King of the Chablis appellations, the Grands
Crus are characterised by the vigour and structure of their
wines, and by a firmness and sharpness that require 5 to 10,
even 20 years to reach a mellowness that harmonises with their
aromatic complexity and mineral base. In order to preserve its
typicity, this Chablis Grand Cru is vinified and aged on the
lees in the greatest respect of the Chablisien tradition. It
is not marketed until after approximately two years of ageing
in our cellars which allows it to develop aromas and structure
that foreshadow its future maturity and complexity. |

Palate: Round and fat. Fruity in the mouth with flavours of
grapefruit marmalade, ginger and honey. |
