Scientific training
Oenology is a science that obeys a particular set of rules that
imply an understanding
of physics and chemistry. The national oenology degree is a
four-year course
and a recognised science degree. It involves a two-year course
after a scientific bac (obligatory) followed by an additional
two-year diploma either a B.T.S., D.U.T.
or a D.E.U.G.. It is possible to start working immediately after
graduation.
Present from start to finish
The oenologist intervenes at every stage of the wine-making
process even though
the main part of his or her job is wine-making and ageing. It
is a profession that covers every aspect of the life of a wine
from selecting the vines to customer advice,
from blending to tasting.
A changing profession
Over the past few years, the profession of oenologist has progressively
moved back toward the vines themselves. While before this, the
profession concentrated more
on the laboratory side of things, it has shifted back to growing
and the wine-making process. Today, the link between the quality
of the wine and that of the grape is more
and more evident. It is therefore only natural that oenology
evolves in this direction.
Perspectives for the future.
The communicative role of the oenologist is developing progressively,
notably in tandem with sales people and sommeliers. They aim
to raise awareness among clients about local areas and wines
that correspond to their taste and needs.
