Natural sweet wines
are mainly produced in the south of France and their rich sweet
flavour reflects the sun-drenched lands of their origins.
They are manufactured like traditional wines, with one difference
- alcohol or eau-de-vie are added during fermentation. This
operation, known as "vinage" has a double effect :
on the one hand it raises the alcohol level of the wine ; on
the other it stops some of the sugar present in the grape juice
from turning into alcohol thus resulting in a sweeter wine.
The complex aromas obtained by this procedure make natural sweet
wines very popular aperitif wines in France |
